Back to School is upon us and what better time to make some changes in the kitchen than now? Today I am going to share with you how to make homemade, no cook, instant pudding mix! YES you can make this at home and there is zero cooking involved. Because in my book "instant" means just that! This is super simple, takes only a few ingredients and you are going to love having this on hand. You can switch it up and flavor it any way you choose. Just let your imagination be your guide!
The secret here is Instant clear jel. This is a modified food starch that is what makes this magic happen. The type I use is GMO free and easily accessible. It is also not expensive so one bag will go a long way. This is also the secret ingredient I use to stabilize my whipped cream. This also makes beautiful, smooth gravies, puddings, lofty and soft cakes and cookies. This stuff is great to have on hand!

The vanilla is straight forward. Granulated sugar, clear jel, vanilla powder, salt and I have added a bit of turmeric for color. You can add more or less or leave it out if you prefer. This just helps the vanilla to be more than a paste color. We eat with our eyes and the yellow looks much nicer.
The chocolate is just the same, only with the addition of Dutch process cocoa powder and no turmeric. All the ingredients are placed in the food processor or standard blender and mixed well until it is a fine, cohesive powder. Then just pop in a mason jar and use as needed.
My best result for creamy pudding was 1 cup of mix to 2 cups of the milk of your choice. This comes out thick and creamy! If you like to make a smaller batch simply make it with 1/2 cup of mix and 1 cup of milk. If you are using this in a cake or cookie recipe a standard box of mix is 1/2 cup so you can go from there.
This is really great to have on hand for quick desserts and snacks. I think you will find it really great! It is not as chemical laden as the store varieties and you know what went in there.

Vanilla Pudding Mix
2 cups granulated sugar
2 cups Instant Clear Gel
1 teaspoon salt
1 teaspoon vanilla bean powder
½ teaspoon turmeric (optional)
Chocolate Pudding Mix
2 cups granulated sugar
2 cups Instant Clear Gel
1 ½ cups Dutch process cocoa powder
1 teaspoon salt
1 teaspoon vanilla bean powder
Step by Step Instructions
Place the ingredients for either flavor into the bowl of a food processor or standard blender.
Blend/mix for at least 1 minute or until the mixture is well blended and becomes a fine powder.
Store in an airtight container, such as a mason jar with a tight fitting lid. Store in a cool dry place for up to 6 months.
TO PREPARE PUDDING:
Blend 1 cup of pudding mix with 2 cups of milk.
Add in 1 tablespoon of vanilla extract.
Whisk well until the mixture thickens. If you wish for your pudding to be thicker add more mix by the spoonful until the desired consistency is reached.
Refrigerate any unused pudding for up to 3 days.
